Citrus Chicken Salad
8 cups baby spinach leaves
3 cups chopped cooked chicken (start with 1 lb. uncooked)
1 can (11 oz.) mandarin orange segments (drained)
1 cup sliced mushrooms
1/4 cup real bacon bits
1/4 cup low-calorie vinaigrette of your choice
1/4 cup pecan pieces
Toss first five ingredients together in a large bowl. Add dressing and pecans just before serving.
Four 2-1⁄2 cup servings: 300 calories, 34 grams protein
